Poha Upma (Aval Upma) - The NC way

NC is Nature Cure - Unave Marundhu concept - Leading life in natural way and avoiding medicines by eating all the foods (vegetables, fruits, grains, cereals etc) in natural way without destroying their nutritional value.

This recipe is for 25 people.

Ingredients:
1. Red Poha (Sivappu Aval) - 2.5Kgs (approx 100gms per person)
2. Groundnut - 250gms
3. Cold pressed sesame oil (Nallennai) - 25ml

Vegetables (7½ Kgs - 300gms per person)
4. Onions - 1½ Kgs
5. Carrot - - 2 Kgs
6. Capsicum - 1½ Kgs
7. Peas - ½ Kg
8. Potatoes - 1½ Kgs
9. beans - ½ Kg


10. Salt to taste (1 tsp)

To Grind
11. Green Chillies - 5nos
12. Ginger - 100gms
13. Curry leaves - a handful

To Chop
14. Coriander - 2 or 3 small branches
15. Coconut - 3 to 4 depending on size

Preparation:
Clean poha in water, drain and keep aside
Clean, peel and chop the veggies and keep it ready.
Make a paste of chillies, ginger and curry leaves and keep it aside.
Clean and chop the coriander.
Scrap the coconuts and keep it ready.

Heat kadai, add 20ml of cold pressed sesame oil, mustard and groundnuts.
Add onions and saute them.
Add green chilli, ginger, curry leaves paste. Then add veggies, sprinkle water and keep it covered on low flame.
Let it cook.
Add soaked poha and stir on a low flame till done.
Switch off the stove and add coconut gratings and chopped coriander.

Add salt to taste.

Note: All the above measurements are for 25 persons, please change according to the number of servings.
