Puran poli is prepared like a stuffed paratha, the taste is awesome & it is very soft.
We are using Wheat flour instead of Maida and is good for health.
Makes 5-6.
Dough:Wheat flour - 1 cup
Oil - 2 tbsp
Powdered sugar - 2 tsp
Salt - a pinch
water to make the dough.
Filling:Soak ¾ cup tur dhal for 30 mts & cook till grainy.
Drain & grind fine, finally adding ¾ cup powdered jaggery.
Heat 1 tbsp ghee & sauté the filling till it becomes thick & reaches rolling consistency.
Add nutmeg & cardamom powders.
Now take the dough & make small round balls and lightly roll it to a disc.
Keep puran ( twice the quantity of outer dough ) in the centre. Brush along the outer edge with water.
Bring all edges from around to the centre & cover to make a tight ball.Roll into chappathi about 6" in diameter.Heat a flat tava.Roast this on medium heat by using ghee.Flip it & roast the other side.It will become golden coloured on both sides.Keep puran ( twice the quantity of outer dough ) in the centre.
